Rudy’s Country Store and Bar-B-Q originated in Leon Springs, Texas, evolving from a 1920s gas station and grocery store to add barbecue in 1989. This Texas-based chain, distinct from other restaurants with similar names, is known for its smoked meats and unique spicy barbecue sauce, which was developed by co-owner and pitmaster Mac “Doc” Holiday using his mother’s recipe
