Hatch, New Mexico, known as the “Chile Capital of the World,” was settled in 1851 as Santa Barbara, abandoned due to Apache raids, and re-established in 1875, taking its name from Brigadier General Edward Hatch. The village in the fertile Mesilla Valley is a hub for agriculture, specializing in renowned green chiles developed in the early 20th century.
